Boreas Lemon Macadamia Bread

1 cup sugar

1/3 cup butter, melted

1 tablespoon lemon extract

2 eggs

1 1/2 cups unbleached flour

1 teaspoon baking powder

1 teaspoon salt

1/2 cup milk                 

peel from 1 large lemon, grated

1/2 cup Macadamia nuts, chopped

Glaze:

Juice of 1 large lemon (2-3 tablespoons)

1/3 cup sugar

In a large bowl, cream sugar butter, lemon extract and eggs.

In a separate bowl, combine the flour, baking powder and salt.

Stir the dry ingredients into the egg mixture alternately with the milk.

Mix in lemon peel and nuts.

Pour into a greased loaf pan, or two smaller loaf pans. Bake at 350 for 45-60 minutes (maybe less with smaller bread pans, or until a knife inserted in center comes out clean.

For glaze: While bread is baking, mix juice and sugar. With a toothpick, poke small holes in the warm bread immediately upon removal from the oven.

Drizzle glaze over the top of the warm bread. Let the bread sit overnight and serve cold.

Note: You can substitute berries or other types of nuts for the Macs!
